recipe of idli

Idli Sambhar
After a lot of requests, i m finely ready to give a detailed post on How to make soft idli at home? South Indian dish Idli is not easy to make but very healthy and easy to digest. Idli was a regular breakfast at so many home. My hubby really love this idli when i make it at my home. Its very soft and tasty and delicious dish. Generally it serves with south Indian sambhar (daal) and south Indian chutney.

1. 1 cup white urad daal
2. 3 cup rice
3. 1/2  teaspoon fenugreek seeds (methi dana)
4. Oil for greasing
5. Salt (taste wise)
6. 3 - 4 lemon juice
7. Baking soda

1. Soak the urad daal and fenugreek seeds (methi dana) in enough water for 2 - 3 hours.
2. Soak the rice in enough water for 3 - 4 hours.
3. Now, Drain excess water from rice, urad daal and fengureek seeds. 
4. Now, take a mixer bowl, add fenugreek seeds and urad daal in it with little little water and make a smooth pest of it and transfer it in a bowl put it asides.
5. Blend the rice in a mixer bowl by adding water in it and make a smooth pest of it. Transfer it in a bowl and put it asides.
6. Now, combine the rice, fenugreek and urad daal pest in a bowl, cover it properly and keep it aside to ferment overnight.
7. Once the better is fermented properly, then add salt and 3 - 4 lemon juice and pinch backing soda in it and mix it properly by using spoon.
8. Now, greased idli molds by using oil, add idli better in it and steam it for 10 to 12 minutes.
9. Repeat whole process for remaining better of idli and make more idli from it.
10. Serve hot hot idli with sambhar and chutney.
